Matcha Chaos Cookies

Ingredients

220 g flour

1 tsp baking soda

½ tsp salt

1 tbsp cornstarch

3 tbsp matcha powder (The Good Stuff)

170 g unsalted butter, room temp (aka soft, not melted)

180g light brown sugar

1 large egg + 1 extra yolk

1 tsp vanilla extract

80g white chocolate chips (or depending on how wild you feel)

How to make it

In a small bowl, whisk together flour, baking soda, salt, cornstarch, and matcha. 

Cream the chaos:

In a big bowl, beat butter, white sugar, and brown sugar for 1–2 minutes until fluffy.

Drop in the egg, yolk, and vanilla. Beat again until smooth.

Scrape the bowl if needed. We don’t waste.

Mix it up:

Add the small and big bowl together. Stir until a dough forms. 
Then dump in the white chocolate chips and give it one last mix.

Let the dough chill for a few minutes.

Bake it hot:

Preheat the oven to 175°C. Line a tray with parchment.

Scoop out big chunks (a big tbsp).

Bake for 11–12 minutes, just until the edges are slightly golden and the centers look soft.

Trust the process.

Cool down:

Let them sit on the tray for 10 minutes.
then move to a rack to cool.
